Fluffy Blue Marshmallow Recipe

Fluffy Blue Marshmallow Recipe

Makes about 96 1-inch

(*recipe from Smitten Kitchen)

This is my first time making these marshmallow and the results are G-R-E-A-T and Y-U-M-M-Y!!

Go ahead and try it and no baking is required!

About 1 cup confectioners’ sugar
3 1/2 envelopes (2 tablespoons plus 2 1/2 teaspoons) unflavored gelatin
1 cup cold water, divided
2 cups granulated sugar (cane sugar worked just fine)
1/2 cup light corn syrup
1/4 teaspoon salt
2 large egg whites or reconstituted powdered egg whites
1 tablespoon vanilla (alternately: 1/2 of a scraped vanilla bean, 2 teaspoons almond or mint extract or maybe even some food coloring for tinting)

Oil bottom and sides of a 13- by 9- by 2-inch rectangular metal baking pan and dust bottom and sides with some confectioners’ sugar.

In bowl of a standing electric mixer or in a large bowl sprinkle gelatin over 1/2 cup cold cold water, and let stand to soften.

In a 3-quart heavy saucepan cook granulated sugar, corn syrup, second 1/2 cup of cold water, and salt over low heat, stirring with a wooden spoon, until sugar is dissolved. Increase heat to moderate and boil mixture, without stirring, until a candy or digital thermometer registers 240°F, about 12 minutes. Remove pan from heat and pour sugar mixture over gelatin mixture, stirring until gelatin is dissolved.

With standing or a hand-held electric mixer beat mixture on high speed until white, thick, and nearly tripled in volume, about six minutes if using standing mixer or about 10 minutes if using hand-held mixer. (Some reviewers felt this took even longer with a hand mixer, but still eventually whipped up nicely.)

In separate medium bowl with cleaned beaters beat egg whites (or reconstituted powdered whites) until they just hold stiff peaks. Beat whites and vanilla (or your choice of flavoring) into sugar mixture until just combined. Pour mixture into baking pan and don’t fret if you don’t get it all out (learning from my mess of a first round). Sift 1/4 cup confectioners sugar evenly over top. Chill marshmallow, uncovered, until firm, at least three hours, and up to one day.

Run a thin knife around edges of pan and invert pan onto a large cutting board. Lifting up one corner of inverted pan, with fingers loosen marshmallow and ease onto cutting board. With a large knife trim edges of marshmallow and cut marshmallow into roughly one-inch cubes. (An oiled pizza cutter works well here too.) Sift remaining confectioners’ sugar back into your now-empty baking pan, and roll the marshmallows through it, on all six sides, before shaking off the excess and packing them away.

Do ahead: Marshmallows keep in an airtight container at cool room temperature 1 week.

Orange Cupcakes with random designs

Last week, i had a fun baking session with Sunnie at my place. We went out and had our lunch before starting the baking session.

At first, we didn't have any idea about what we were going to make. We had the idea of almond cupcakes but realised that we had no almond. We also had the idea of pistachio cupcakes (sound yum huh?) but also realised that i had NO pistachio!! Instantly we felt really stupid for not checking the pantry before heading to lunch before. All we had at home was chocolate, oranges, lemons and bananas. Finally, after all the thinking and deciding, orange won our hearts.

hmmmmmmmmmm......ORANGE CUPCAKES :)

We use orange peel in the cupcakes and it tasted really really good and fruity. It was a good decision after all.

Done with cupcakes, now with decorations. Again, we had no idea what to decorations to settle with so we both made things that we felt like. First was the butterflies, then Sunnie went on to beach theme, space theme and lastly roses. (See what i said about random?)

I know i know, orange cupcakes didn't exactly go with the butterflies, roses, beach and etc but that was like our "no plan" session. Should have made something fruity as the deco but oh well!

We didn't finish decorating until like 9 at night and continued after dinner till like about 2am. Crazy huh? Started at 2pm and ended at 12am. Almost 10 hours of serious baking and decorating! (excluding dinner)
Overall, i enjoyed it cause we took our own sweet time with Sunnie's ipod music in the background and Chico lazing just beside me. It was a lazy Sunday with a little productivity in it :P

ps: Here are the ones that i made. Sunnie took hers home so i didn't manage to snap some pictures of it. But believe me, when i said we had a random creation day

enjoy!

The move won't be for another month but i thought i just give a heads up to all of my lovely readers :). So stay tune!
Oh yes, don't worry, i will make a BIG post announcement when the new site is up and ready!

Blue† Christening Cake

It been a very very very extra hectic week for me.
(I cannot stress how busy i have been)

Here's an example of days from this week,
First my day work starts from 9am till about 3pm. After work i get home and start my baking/decorating routine till about 6pm. Then off to my night job at 7pm-11.30pm. Later get back home again to resume with my baking till about 2.30am....
Next day back up again at 7 or 8 am to start my day all over again.
(that was yesterday and now i feel so buggered! plus my feet is so sore from all the standing. *cries*

Every night of this week has been with an event on or something. I promise i will have a quiet on next week (BAH! i doubt that cause i have more cake orders!)EEEEEEeeeeeee, bad news for my feet again.

Besides that, I think i've inhale a little too much cocoa powder, i feel it tickling my nose right now :p

Well, this week i made 50 cupcakes, Hello Kitty Cake and Christening Cake.
No pictures yet from the Hello Kitty cake and cupcakes. In the mean time, here are some pictures from the Christening Cake.
*I kinda like the background, guess where it is? In the lift!
LOL.
My explanation : i had no time to even find the camera to cam-whore this cake!

I almost forgot to take any until Yoong reminded me that i should at least keep a portfolio of my creations just for future reference. I'm glad i did listen to him (Thanks honey!) :)

Baby Blue Teddy Bear

My first ever Christening bears!

I've made teddy bears before but never made a teddy for the purpose of christening (eg: holding and bible and holding a cross) I had to do my research on crosses and bible's looks.  :p
Well, now that they are done, I think they do look alike a bible and cross right right???? *smiles proudly*

Its just a  sudden urge that struck me to make these bears. Or maybe because this afternoon I received made a cake order for Kelly's son's Christening on the 19th April 2009. I do have a week to do it but i thought tonight shall be blue bear's night! I'm so proud that they turn out better than i expected :)
These adorable teddies a the cake topper for a two tier cake. Hehe. Can't wait to start on it.

Oh yes, i promised to make cake pops but there's a slight delay in it due to blue teddies. I WILL make them after my mid-semester exams which is ........(the week after Easter celebrations).......

These are the basic equipment I used.
(Scalpel, balling tool, mini rolling pins, toothpicks, sugar glue and of course fondant!)

And..... not to forget gum!!!

Cupcakes on Sunday

I've been slacking off uni work today and entertained myself in the kitchen with some vanilla cupcakes. I adapted the recipe from Miss Bakerella to help inspire my flower cupcakes. Obviously mine isn't as great as her but for a first attempt. Not bad!

Cupcake Stand

Hello everyone!
I've been a busy little bee every since uni started this week. GROANS!! But since it the first week, i've been able to sneak to the kitchen to make some cupcake on a stick! It's not actually done yet, but in the mean time i made a cupcake stand for A. Sim's dinner this weekend. I was planning to make some cupcakes as dessert. YUM! No pictures of the cupcakes yet but here's the up and coming stand!
